Carrying both connections is genuinely useful, because it removes the decision you would otherwise have to get right at purchase. Start on USB attached to a single till, and move to the network later when a second station or a kitchen printer arrives — without replacing the hardware.
The network option is the one to grow into. A network printer has its own address, so every till and tablet can print to it independently and swapping a computer changes nothing. If you go that route, give it a fixed IP address or a DHCP reservation; a printer that takes a new address after a power cut appears broken.
